Being plentiful in crystal clear Greek waters, these small creatures are symmetrical in shape and known for their roe, which is classed as a delicacy, and are also associated symbolically with rebirth or long life. We aim to provide our diners with the same harmonious balance of tastes and flavours in every bite, creating whispers of traditional dishes infused with contemporary twists.
